Shinshu’s obanzai cuisine is similar to Kyoto’s obanzai, yet it features unique elements that are distinctly Shinshu. Being a landlocked area, Shinshu has developed a food culture that emphasizes preservation and locally sourced ingredients. The vegetables used daily are often homegrown, and the preservation methods combine fermented seasonings like miso, soy sauce, vinegar, and mirin to extend shelf life and enrich flavors.
Thanks to these fermented seasonings, meals can improve gut health and immunity, contributing to Nagano’s Takayama Village, home to our establishment the TOJI.ba MATSUKAWAKAN, ranking first in Japan for longevity.
