Why Shinshu Obanzai Is Loved

A special Saturday night seafood course featuring fresh local catches

Shinshu’s obanzai cuisine is similar to Kyoto’s obanzai, yet it features unique elements that are distinctly Shinshu. Being a landlocked area, Shinshu has developed a food culture that emphasizes preservation and locally sourced ingredients. The vegetables used daily are often homegrown, and the preservation methods combine fermented seasonings like miso, soy sauce, vinegar, and mirin to extend shelf life and enrich flavors.

Thanks to these fermented seasonings, meals can improve gut health and immunity, contributing to Nagano’s Takayama Village, home to our establishment the TOJI.ba MATSUKAWAKAN, ranking first in Japan for longevity.

Known as “Shinshu” since ancient times, Nagano Prefecture offers a variety of distinct seasonal vegetables that shine in traditional homemade dishes, bringing out the natural flavors of each ingredient.

Our inn’s owner preserves a 150-year-old family recipe, and this exclusive obanzai experience is available only here in Nagano Prefecture. Not only are the dishes visually appealing, but each ingredient’s rich flavor is sure to impress.

Shinshu obanzai is more than just a meal—it’s a unique experience that lets you connect with Japanese culinary heritage and Shinshu’s (Nagano Prefecture’s) history and natural landscape. We invite you to visit Nagano and taste the authentic flavors of Shinshu.

Simple Flavoring to Highlight Ingredients: Shinshu cuisine is often prepared with traditional dashi and combined with fermented seasonings like Shinshu miso and soy sauce, bringing out the full flavor of each ingredient in a delicate, enjoyable way.

Beautiful Presentation: With obanzai, the five flavors and colors are essential, and each dish is plated beautifully to appeal to the eye and stimulate the appetite.
